I am a big proponent of having desserts on hand. Always. Because when the cravings monster strikes, I would so much rather have a Keto-approved treat to shut him up than find myself at 11 PM, out of willpower, staring into the fridge for absolutely anything that I can shove in my face.

But keeping the house stocked with Keto cookies or brownies or ice creams just isn’t always feasible. Every batch runs out at some point, and there usually just isn’t time during the week to whip up something new.
Enter the 5-Minute Desserts.
They are usually of the blender variety, because honestly, that’s just the quickest way to throw something together and have minimal clean-up afterwards. My husband and I swear by our Ninja Bullet blender (available on Amazon)! It’s easy to clean (aka: it’s dishwasher-safe) and is perfect for when we just need a little something sweet and satisfying.
So if you find yourself facing a chocolate craving or just hankering for something sweet, give this pudding a try. The recipe is very modifiable if you want to add more chocolate, or you could include heaving whipping cream to give it even more thickness. The real (and only) secret ingredient of this recipe is the Xanthan Gum, which gives the pudding its texture. Pro tip: try to spread the Xanthan Gum along the top of the mixture rather than dumping it in as one clump, or it may form little gelatinous pockets.
And once you have your ingredients, it’s pretty simple… just blend it up and serve!
- 1⁄4 cup coconut milk
- 1⁄4 cup almond milk
- ½ tbsp unsweetened cocoa powder
- ⅛ tsp xanthan gum (available on Amazon)
- 5 drops Stevia extract (available on Amazon)
- ½ cup crushed ice
- Optional toppings: Flaked coconut and Lily’s Dark Chocolate Chips (available on Amazon)
Step 1: Add ingredients to blender
Step 2: Blend it up!
Step 3: Top with flaked coconut, chocolate chips, whipped cream, or all of the above!
