Fresh, bright fruit and rich, caramelized nuts make this strawberry and pecan keto salad irresistibly delicious. Plus it's ready in under 10 minutes!
  1. Wash and slice the strawberries.
  2. Roughly chop the pecans.
  3. In a small skillet over low heat, add the chopped pecans. Spray lightly with cooking spray and add a pinch of salt, then stir to combine.
  4. Continue cooking on low heat, stirring occasionally, as you assemble the rest of the salad. The pecans are done once they are lightly toasted, about 5 minutes.
  5. As the pecans cook, add the lettuce to your salad bowl.
  6. Add 1 tbsp of dressing, then toss to combine.
  7. Add the strawberry slices and goat cheese.
  8. Once the pecans are done, remove from heat and add the stevia extract drops (if you don’t have extract drops, replace with 1 tbsp granulated sweetener). Stir to combine.
  9. Add the pecans to the salad and serve!
