Pair brussels sprouts with carb-free foods like bacon and eggs to make for a perfect Keto or low-carb meal! This brussels sprouts and bacon hash comes together in minutes and roasts in the oven while you prep the eggs to go over-top. Easy, delicious, and the perfect for breakfast, brunch, or brinner!
  • 85 grams of brussels sprouts
  • 2 slices of bacon
  • 2 eggs
  • 1 tbsp olive or avocado oil (available on Amazon)
  • Salt and pepper to taste
  1. Preheat oven to 425º F.
  2. Chop brussels sprouts into quarters and place in a mixing bowl.
  3. Add tbsp of olive or avocado oil, add salt and pepper to taste, and mix.
  4. Chop two slices of bacon into small chunks.
  5. Cover a baking sheet in tin foil. Mix bacon chunks and brussels sprouts, then spread out on baking sheet. Cook for minutes 25-30 minutes, stirring the bacon and brussels sprouts mixture halfway through. Optional: Broil for a minute or so at the end to really crisp the brussels sprouts.
  6. Top with two eggs and enjoy!
